    In raw meat products, nitrite converts myoglobin into nitrosomyoglobin, which gives the product a red color. In heated meat products, nitrosomyoglobin forms the pink-red nitrosomyochromogen. The unreacted nitrite (the residual nitrite) remains to inhibit the growth of unwanted bacteria.
