    In raw meat products, nitrite ensures the conversion of myoglobin to nitrosomyoglobin, which gives the product a red color. In heated meat products, the pink-red nitrosomyochromogen is formed from nitrosomyoglobin. The nitrite that has not reacted (the residual nitrite) is left to inhibit the growth of unwanted bacteria.
