    COARSE sea salt 5 kilos. Sea bass in salt crust Recipe by: Peter Bootsma LetzQ Ingredients: 2 sea bass with a total weight of 950 grams 2.5 kilos of fresh, coarse sea salt 3 proteins Filling: Lemon Fennel Thyme Salt Pepper This is a recipe that simply cannot go wrong! Buy the fish fresh and only have the abdominal cavity cleaned, so do not descale the fish! Take an ovenproof dish or baking tray. Mix the egg whites with the salt so that you get a kind of wet sand. Sprinkle a layer of ± 2.5 cm coarse sea salt on the bottom of the plate/dish, place the sea bass in the middle and cover it all around with a layer salt of maximum 2cm. Don't make the salt layer too thick! (mould and press it briefly, if necessary wet your hands under the tap) Heat the BBQ at 200c°, bake the fish for 30 minutes at 200c°. ?The sea bass has a cooking time of at least 30 minutes, a less heavy fish does not have a shorter preparation time! After the cooking time, remove the fish from the BBQ and let it rest for 5 minutes. Tap the salt crust open with a heavy object, wipe away any salt with a kitchen brush and serve the fish half or completely in the crust on a platter at the table. You really get a beautiful, juicy fish and full of flavor!
