      Butcher paper is grease-free and breathable so you can cook the dish low & slow without much moisture loss. This paper keeps your meat moist, but is breathable enough to protect your crust and let in extra smoke flavor. Until now, aluminum foil has been the way to wrap meat. The disadvantage of aluminum foil is that it is virtually airtight, which means that the crust on the meat, which you have been working on for hours, becomes soggy and starts to steam and is therefore ruined. The butcher's paper takes your Shortribs, Brisket, Spareribs and Pulled Pork, etc. to a higher level.

      The butcher paper retains most of the heat, but allows the meat to breathe while retaining plenty of moisture and maintaining that nice thick crust.
