    The Kiritsuke knife is a classic Japanese kitchen knife, characterized by a straight blade edge and a subtly curved tip. It is known as a symbol of craftsmanship and status in the Japanese culinary world. This versatile knife is designed for a variety of cutting tasks, including filleting fish, slicing meat and preparing vegetables.

    The Kiritsuke knife combines the functionality of a santoku and chef's knife, while its unparalleled sharpness ensures exceptional precision with every cut. The knife is hand-forged from no fewer than 67 layers of AUS10 steel and has a hardness of 61 Rockwell. This results in a highly enjoyable cutting experience and long-lasting sharpness. 

    The knife has an elegant design with a burl wood handle combined with resin, ensuring durability. The beautiful pattern on the blade is created by 67 layers of steel incorporating a special black material, which further accentuates the lines of the steel layers. 

    The limited edition is available in a limited run of just 300 pieces, making it a true collector's item. Each knife has a unique handwritten number indicating which one of the 300 pieces you own. It is packaged in a wooden box as a tribute to our very first packaging design, with which the brand began 10 years ago.
